Homegrown Mushroom Gravy RECIPE

If you have been following along with this blog over the past few years then you know that I've been growing my own (edible) mushrooms. (click HERE to see what kinds of mushrooms I have grown).

Today I am going to share my mushroom gravy recipe made with homegrown Blue Oyster mushrooms. 




Ingredients:
2 cups cut Blue Oyster mushrooms (or any edible mushroom)
1/3 cup finely chopped onion
1/4 cup butter
1/4 cup flour
2 cups beef broth
1/2 cup heavy cream
ground black pepper to taste
salt to taste
(optional - you can add a little wine if desired.  This will be when the spices & cream are added)



Begin by preparing ingredients as listed above (cutting onion & mushrooms).

In a large frying pan saute the onion and mushrooms in a little melted butter (with an added tablespoon of olive oil so that it does not get smokey) until it resembles the picture below:

Remove the sauteed mushroom/onion mixture and set aside in a bowl.  Now melt the butter in that same frying pan (without the onion/mushroom mixture) and quickly add the flour - stirring all the time (for a couple minutes).  Now slowly pour the beef broth into the butter/flour mixture and make sure that you are gently whisking all the time.  Bring to a boil and you will see that it will start to thicken (see picture below):

Add the mushroom/onion mixture and stir until it starts to slightly boil.

Finally, add the cream (and pepper/salt) - stir and cook for a couple more minutes while stirring all the time.  It should be a perfect gravy consistency by now (see picture below).

Serve over mashed potatoes, meatloaf or whatever food that is perfect smothered in gravy.  ENJOY!
