Old Fashion Rhubarb Bread RECIPE

This recipe is "old fashion" for two reasons:
1.  Rhubarb is considered an old fashioned ingredient
2.  This is a simple fruit bread recipe without any modern twist or tweak (Actually, technically rhubarb is a vegetable).  

Last year I shared with you how to save rhubarb seeds:


Ingredients:
1 egg
1 cup milk
1 tsp vanilla extract
1 1/2 cups brown sugar
2/3 cup melted butter (cooled to lukewarm)
1 tsp baking soda
1 tsp salt (unless you are using salted butter - they decrease to 1/2 tsp salt)
2 1/2 cups flour
2 cups diced rhubarb
1/2 cup chopped walnuts

Begin by preparing the rhubarb (rinsing and dicing) and by melting the butter so that it can cool.

In a large mixing bowl combine the egg, milk, vanilla extract, sugar and melted butter.  Stir until combined (but not whipped). 
Now add the flour, salt and baking soda - stir until combined.  Finally, add the rhubarb and chopped nuts (see pictures below):

Grease 2 loaf pans (or line them with parchment paper) and fill each loaf pan with equal amounts of batter (see picture below):

Bake in a preheated 350 degree oven for 45 to 55 minutes (or until a toothpick inserted in the middle comes out clean).

Remove from the oven and cool while in the pan for 10 minutes before turning the loaves out of the pans.

Serve warm or cooled (with or without butter) and ENJOY!
