A Good Beta Carotene Garden Year
(Squash, Carrots & Sweet Potatoes with RECIPES)
Our garden has been a huge success when it comes to vegetables that are overflowing with beta carotene. 2020 may have been the most difficult year for most of the world but the bright side of this year for me was our garden harvest.
Beta carotene gives fruits and vegetables their orange hue. In our body beta carotene converts to vitamin A, which is good for eye health, strong immune system and good skin.
As you can see by the picture above our garden produced wonderful crops of butternut squash, carrots and sweet potatoes. Below I share my favorite previously posted recipes using these veggies. ENJOY!

Oh, I wish we could grow sweet potatoes in Wisconsin. I had a good carrot crop this year, but mine always grow short and fat like yours and do not look like the ones in the grocery store. I wonder why that is.
