Blackberry Lemon Cheesecake Pie RECIPE

Blackberry Lemon Cheesecake Pie
I'm doing a new series on Sundays about "The Fruit of the Spirit" - you see, when one becomes a Christian they are filled with the Holy Spirit.  As a result, there are certain characteristics that overflow from a Christian's life (like love, joy, kindness etc).

I decided that during the week after each "Fruit of the Spirit" post I will feature the actual fruit that I symbolically used for that characteristic.  Most recently we studied "KINDNESS" (click HERE to read the entire post "Fruit of the Spirit #5 - KINDNESS").  Today, I am featuring one of my recipe creations using BLACKBERRIES - (this was the fruit that I used as a symbol of KINDNESS).

This recipe is a bit more complicated than most of the recipes that I have shared with you in the past.  I have separated it into 4 steps:
STEP#1 - Blackberry Juice
STEP#2 - Pie Crust & Chocolate Layer
STEP#3 - Cheesy layers
STEP#4 - Putting It All Together


STEP#1 - Blackberry Juice

1 1/2 cups fresh blackberries (rinsed and drained)

1 1/2 cups water cups water (preferably filtered water)

Prepare the blackberries as described above.  Place the blackberries and water in a medium pot and bring to boil.  Simmer on very low heat for about 30 minutes to an hour  Now you will need to strain the juice to separate the blackberry seeds/pulp from the liquid (see pictures above left).  Allow the juice to drain out of the colander for an hour (you should have 1 cup of juice after straining out the seeds).

Allow juice to cool and continue on to make the rest of the pie or place in the fridge for other uses.

NOTE - For this pie recipe you will only be using 1/8th of a cup of juice.  Use the rest of the juice to make syrup for waffles or pancakes (click HERE for Blackberry Syrup RECIPE)

STEP#2 - Pie Crust & Chocolate Layer
Click HERE to learn how to make your own pie crust - use the single crust recipe & bake in a preheated 475 degree oven for 8 to 10 minutes or until desired golden brown color is achieved.  Allow crust to cool.


Once the crust has cooled then melt 1 tablespoon chocolate chips with 1 tablespoon of coconut oil.  Gently spread along the bottom of the cooled pie crust (see picture above).  Please in the fridge to cool until step #4.

STEP#3 - Cheesy layers

BLACKBERRY CHEESE LAYER
1/2 package cream cheese
1/4 cup powdered sugar
1/8th cup blackberry juice (from previous step - cooled of course!)
a few drops of red food coloring (optional)
1/2 cup whipping cream (already whipped with 1/2 tablespoon vanilla sugar)

With an electric mixer combine the cream cheese, powdered sugar, juice and food coloring.  Mix until everything is combined and it should resemble the picture above on the left.  Now gently fold in the whipped cream and it should resemble the picture below. (set aside until building the pie) 

LEMON CHEESE LAYER
1/2 package cream cheese
1/4 cup powdered sugar
juice from half of a lemon (I also used the rind but there will be little rind bits so if you don't like that you may omit the rind)
a few drops of yellow food coloring (optional)
1/2 cup whipping cream (already whipped with 1/2 tablespoon vanilla sugar)

In a different bowl with an electric mixer combine the cream cheese, powdered sugar, juice and food coloring.  Mix until everything is combined and it should resemble the picture above on the right.  Now gently fold in the whipped cream and set aside.

STEP#4 - Putting It All Together
The chocolate layer should be hardened by now and the pie ready to be put together.  Spread the blackberry cheese layer on top of the thin chocolate layer in the bottom of the pie crust (previously baked and cooled).  Now gently spread the lemon cheese layer on top of the blackberry cheese layer.  Chill in the fridge for about 1 hour.

Cut, Serve & ENJOY!
