Cucumber, Dill, Chives & Tender Zucchini Salad #Recipe

Cucumber, Dill, Chives & Tender Zucchini Salad

This is such a refreshing and delicious summer salad - and also so simple!

Printable Recipe

2 small to medium zucchini (still very tender when eaten raw) (washed & chopped - discard the ends in the compost)
cucumbers (I used pickling cukes but it should measure about 2 cups when chopped) (washed, ends removed & then chopped) (since I used my home grown cukes I left the skin on but you may peel off the skin)
a bunch of chives (rinsed & chopped)
a bunch of fresh dill (or 1/2 tsp dry dill) (if using fresh - rinse & chop)
salt & pepper to taste
2(or more) tablespoons of sour cream (this quantity depends on the size of your zucchini & cucumbers)

Prepare the ingredients as stated above.  Place everything in a large mixing bowl and combine.

Chill first or serve immediately & ENJOY!

  1. This salad sounds so tasty!! My boyfriend's brothers are OBSESSED with dill, so since I will be cooking a meal for them soon, I might keep this recipe in mind!
