Neapolitan Swirl Refrigerator Cookies #Recipe

Neapolitan Swirl Refrigerator Cookies

Refrigerator Cookies are a perfect summertime treat for two reasons:
1.  Bake only what you want to eat right now and bake them in your toaster oven so that you don't have to heat up your entire kitchen by turning on the oven.
2.  Portion control - only bake up a few so that you are only eating a few.

Who doesn't love this trio combination of flavors: vanilla, strawberry & chocolate!  Plus, I wanted to make them visually fun and what better way to make them in a swirl pattern. 
I originally created this recipe because I wanted to use some of my strawberry jam - if you want to learn how to make your own jam click HERE (note - this is a recipe for Strawberry Mango jam but to make it pure strawberry just omit the mango & increase the strawberry by 1 cup).

You will first need to make all 3 flavored dough separately:




Vanilla


1/3 cup butter (softened)


1/3 cup brown sugar


1/3 cup granulated sugar


1 egg white (click HERE to learn how to separate eggs)


1 teaspoon vanilla extract


1/4 teaspoon salt


1 teaspoon baking powder


1 1/4 cup flour
In a large bowl & with an electric mixer - cream together the sugars, vanilla extract & butter.  Add the egg white & mix just until combined.  Stir in the remaining ingredients with a  wooden spoon.  Form into a ball & set aside until the remaining 2 dough flavors are completed.





Strawberry


1/3 cup butter (softened)


1/4 cup brown sugar


1/4 cup granulated sugar


1 egg yolk (click HERE to learn how to separate eggs)


1/4 cup strawberry jam


1/2 teaspoon vanilla extract


1/4 teaspoon salt


1 teaspoon baking powder


1 1/3 cup flour


4 drops red food coloring (optional)
In a large bowl & with an electric mixer - cream together the sugars, vanilla extract, strawberry jam & butter.  Add the egg yolk & mix just until combined.  Stir in the salt, baking powder & flour with a  wooden spoon.  Form into a ball & set aside until the remaining  dough flavor is completed (If you would like to add the food coloring I added it when I was forming it into a ball and kneaded it in by hand).




Chocolate

1/3 cup butter (softened)
1/3 cup brown sugar
1/2 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/4 cup cocoa powder
1/4 teaspoon salt
1 teaspoon baking powder
1 1/4 cup flour
In a large bowl & with an electric mixer - cream together the sugars, vanilla extract & butter.  Add the egg & mix just until combined.  Stir in the remaining ingredients with a  wooden spoon.  Form into a ball & set aside.

Roll out each flavor separately into rectangular shape - about 1/4 inch thick (it might be easier to lift off if you roll out on wax paper - I used a plastic rolling sheet).  See the picture collage above - I started with the vanilla & set the rolled out rectangular aside.  Then I rolled out the strawberry & place it on top of the rolled out vanilla.  Finally, I rolled out the chocolate & place that on top of the already rolled out strawberry.  Then, take the triple layered dough rectangle & begin to curl the longer edge & roll it until it forms a log (in the picture below I cut the log in half so that it would all fit into the picture and fit into the fridge).  Be sure to roll the log tightly so that your flavors will make a nice swirl pattern.  Now, wrap in wax paper and place in the fridge for at least 2 hours & they can remain in the fridge for a week.

After the dough logs have set up in the fridge then begin slicing 1/4 inch rounds (see picture above & below) - Only slice the amount that you want to bake up now & eat now.  Return the remaining dough to the fridge until another day.

Place on a parchment lined baking sheet & bake in a preheated 375 degree oven (or toaster oven) for 8 to 11 minutes or until desired "doneness" is achieved.

  11. I bet these are so tasty! I love to bake, but haven't in quite a while. I started working after being a sahm for 6 years and trying to balance it all, this will be a fun thing to bake and get back into it.
