Cajun Sauteed Beans with a Ham & Onion Version

Cajun Sautéed Beans with a Ham & Onion Version

It has been such a great bean harvest so far this year.  I like to grow different varieties of beans including the Magic Purple bean (that turns green when cooked), yellow wax beans as well as Roma Italian beans (the large flat variety).  After a while it becomes boring just eating boiled beans (although I still love beans prepared that way).  So about a decade ago I started sautéing my green beans.  There are 2 different versions that I share with you below & it is so easy to make.  Plus, the beans will have a slightly crispy edge that will make this your favorite way to prepare garden fresh beans.

For many years I have used "Tony Chachere's" Cajun or Creole spice mixture (available in most larger grocery stores) - there is no MSG & it is deliciously spicy.

- about 4 cups of beans (click HERE to see how to prepare your beans before cooking)
- a couple tablespoons of olive oil
- "Tony Chachere's" Creole Spices to taste (IMPORTANT - this has salt already included so do NOT add anymore salt)

Prepare the beans, cut to the desired size.  In a large frying pan heat the oil (spray the pan first if desired) - add the prepared beans & sprinkle on the Creole spice mixture to taste.  Toss the beans off & on & sauté until your desired texture & doneness is achieved.

Serve & ENJOY!!

Ham & Onion Version
Instead of using Cajun spices try adding ham & onions!

- about 4 cups of beans (click HERE to see how to prepare your beans before cooking)
- a couple tablespoons of olive oil
- 1 to 2 cups of cubed cooked ham
- 1 medium onion (peeled & chopped)
Prepare the beans, cut to the desired size.  In a large frying pan heat the oil (spray the pan first if desired) - add the onions & sautee for a couple minutes before adding the ham & the prepared beans.  Sauté over medium heat until the desired texture & doneness is achieved (remember to toss the ingredients while sautéing)  

Serve & ENJOY!!

  1. i love tony's and have used it a zillion years! a little on everything, more if you want it spicy. I switched to the more spice (less salt) version and it took a bit of retraining to not have the eggs spicy lol. I do add it to my beans but haven't tried sauteed spicy beans so this will be fun and yummy to try! Thanks for sharing with us at Snickerdoodle!
