Hazelnut Mocha Brownie Pie Squares
That's right - this is a combination of PIE & BROWNIES!! It's a brownie with a crust and frosting!! AND it blends the flavors of Chocolate, Coffee & Hazelnut!!
This is the kind of dessert that you will eat with your hands - the frosting is finger-licking good! Since the crust is thicker than a pie crust - eating with a fork is difficult - just pick it up & eat - no utensils needed.

Crust
1/2 cup butter
1/4 cup powdered sugar
1/4 cup finely ground hazelnuts
3/4 cup flour
Spray a square Pyrex container. In a medium size mixing bowl - Stir together the sugar, hazelnuts, flour and then cut the butter into that mixture. Press this crumbly dough into the Pyrex dish (see picture above). Bake in a preheated 350 degree oven for 20 minutes (or until desired doneness is achieved). Prepare the brownie dough while the crust bakes.
Brownie Layer
2 eggs
2/3 cup sugar
1/3 cup Hazelnuts (finely ground)
1/4 cup butter
1/4 cup milk
1/3 cup cocoa
2/3 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
layer of chocolate chips (I used 1 cup of the semi-sweet mini chocolate chips)
Melt the butter & set aside. In a large mixing bowl, combine the milk, eggs & sugar - stir with a wooden spoon until combined. Now add the melted butter & continue stirring until mixed. Add the remaining ingredients & stir just until combined.
Remove the crust from the oven & spread the mini chocolate chips on the crust while it is still warm. On top of the chocolate chips pour the brownie dough & gently spread with a spatula (see bottom left picture). Bake in a preheated 350 degree oven for 20 (or until a toothpick inserted comes out clean). Place on a cooling rack and cool completely before frosting.

Frosting
1/8 cup butter (softened)
2+ tablespoons cream (half & half or whipping cream)
1 teaspoon instant coffee
2/3 cup powdered sugar
With an electric mixer - blend the butter, 2 tablespoons of cream, instant coffee & 1/3 cup of powdered sugar. Once that is smooth add the second 1/3 cup of powdered sugar - if it is too stiff then add another tablespoon of cream OR if it is too runny then add more powdered sugar (see top picture on the right).

Spread the frosting on the top of the brownies - MAKING SURE THAT THEY ARE COMPLETELY COOLED!!

"The Super Spies and the High School Bomber"

This book opens in a small
town in Michigan where Sarah and her sister Lacey are now living with their
Aunt and Uncle. Still reeling from the fact her parents have disappeared, Sarah
starts the school year with her new friend Jackie Jenkins. When Sarah learns
the school has been bombed, she’s filled with dread. Uncle Walt is a teacher,
and he was in the school when the bomb exploded. Taking matters into her own
hands, Sarah decides to search for him. The rest of the Super Spies are right
behind her. When a fireman chases them away from the school, Sarah becomes
suspicious. She decides to investigate. The FBI arrives on the scene. Sarah
realizes this bombing could have even bigger implications. Searching for the
bombers, Sarah is introduced to the world of terrorism. She fears that the
bombing and her parents’ disappearance are connected and terrorists are
involved. To make matters worse, the bombers are determined to finish the job.
Can the Super Spies find the bombers before it’s too late?
I am still sick and in bed nursing a bad case of the flu and these brownies would just be too awesome to have. I love the hazelnut cocoa combo :)
