Sweet Potato Brownies with Cream Cheese Cranberry Sauce

Sweet Potato Brownies with Cream Cheese Cranberry Sauce

As you my already know - this past week has been "Sweet Potato Week" here in God's Growing Garden.  I wanted to end this yummy week with a super special Sweet Potato Dessert recipe that I just created!

The Sauce is different and delicious but the brownies are so good on their own that just dusting them with powdered sugar is enough to make this recipe a keeper.

1/2 cup sweet potato (previously baked, cooled, peeled & mashed)
1/2 cup butter (melted & cooled to lukewarm)
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup flour
1/3 cup cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
 
Prepare sweet potato & butter as mentioned above.  In a medium mixing bowl with an electric mixer combine the butter, sugar, eggs, vanilla extract & sweet potato mash until blended & creamy (about 2 to 3 minutes).  Now, with a wooden spoon, stir in the remaining ingredients until totally combined.  Spread the batter in a square Pyrex dish that has been sprayed or buttered (notice I said "spread the batter" - this brownie dough will be very thick & cannot be poured into the dish - I used a metal spatula to spread it in the pan - see top 2 pictures - left is unbaked & right is baked).  Bake in a preheated 350 degree oven for 20 to 30 minutes or until a toothpick inserted comes out clean.

If you want these brownies plain with no sauce, then allow them to cool totally before dusting with powdered sugar.

Cream Cheese Cranberry Sauce
1/2 package of Cream Cheese (at room temperature)
1/2 can Cranberry Sauce in a can (the gel kind with no berry chunks)
2 to 3 cups powdered sugar
 
With an electric mixer - blend the cream cheese & cranberry sauce until combined.  Then add the powdered sugar one cup at a time (still using the electric mixer) - continue adding until your desired

VARIATION:  Instead of making the Cream Cheese Cranberry sauce - simply make the whole berry Cranberry sauce (use the recipe on the back of a bag of fresh cranberries) and pour that over these brownies instead of the Cream Cheese version - just as yummy!
