Root Crop Campfire Dinner (aka Hobo Dinner)

Root Crop Campfire Dinner (a.k.a. "Hobo Dinner")

I am so thankful to live in a county in Michigan where burning yard brush & having a campfire is still allowed.  I couldn't imagine life without autumn yard cleanup and campfires.

We just harvested our potatoes a few days ago and I thought that a "Root Crop Campfire Dinner" would be perfect & so much fun!!

This meal is cooked in foil pouches (I know - Aluminum foil is not healthy nor is it environmentally friendly but I barely ever use it - so I made an exception for this dinner).

Begin your fire about 1 1/2 to 2 hours before you are planning to start this dinner (I use the "Tipi" method when building my fires - something I learned from Brownies & Girl Guides or Girl Scouts) (see picture above)

While your fire is burning down - go inside (make sure that somebody is out there watching the fire when you are not able to be there!!) and gather the ingredients to begin preparing your dinner:
1 lb ground meat (I used ground chicken but you may use beef if you prefer)
2 large carrots (peeled & chopped)
3 large potatoes (peeled & chopped in large chunks)
1 large Vidalia onion (peeled & chopped)
Butter or olive oil
Salt & Pepper or  - basil, Cajun spice or Worcestershire sauce
Prepare all of the ingredients as listed above.  Place all vegetables & meat in a bowl & mix together - split into 4 equal portions.  Cut 8 pieces of foil about the size of a large rectangular Pyrex dish.  Take 1 piece of foil  and place in front of you so that it is horizontal (the longer side goes from left to right).  Place 1 portion of your veggie meat mixture on this piece of foil in a line going left to right (like the picture above) & either dot with some butter or sprinkle olive oil & add the spices (basil, Cajun spices or just some salt & pepper to taste).  Take the long edges of the foil & bring them together & fold down about 3 times (see below- picture on the left) (leave a little air space - if it is too tight the foil will split or crack).  Now seal both edges by rolling the foil up about 3 times (see picture below on the right).  Take another piece of foil - place the filled foil pouch seam side down & repeat (sealing the long edge first & then the 2 sides).

Now repeat the above steps until you have used up all of the filling & have 4 foil wrapped dinners (all double wrapped in foil) (see picture below).

Head out to the fire & you should have beautiful red/orange embers ready to cook your dinner (see picture below)

Place your dinners around the fire on the hot embers (it's OK if there are flames on the fire - just make sure that your dinner is NOT on a flame but rather on the outside sitting on a burned down hot ember) (see picture below).  Set the timer for 20 minutes.

Flip each dinner pouch and set the timer for another 20 minutes.

Remove each foil wrapped dinner from the fire (make sure that you use long handled Barbecue utensils).  Bring the "Hobo Dinners" inside to eat or sit on a log around the fire & ENJOY dinner in God's beautiful outdoors!
