Tomato Bacon Grilled Cheese Sandwiches
Adding tomatoes & bacon to a simple grilled cheese sandwich makes it a decadent delight!
8 thinly sliced pieces of Italian bread
1/2 package of bacon (fried & cooled)
3 large tomatoes (washed, drained, cored & sliced)
(2 large slices per sandwich) Cheddar cheese or marbled cheese (the cheese that I used was compact so I used 4 slices per sandwich)
mayonnaise
butter
Prepare the ingredients as listed above. Spread mayonnaise on the inside of each slice of bread and on the outside of each slice spread some butter.
Build your sandwiches: In a large frying pan place 4 slices of bread butter side down. Add cheese on each bread slice. Place bacon (already fried) and tomato slices on top of the cheese. Top the tomatoes with the remaining cheese and finally place the second piece of bread on top of that (remember that the mayonnaise side is the inside of the sandwich). see top picture.
Place the pan over medium heat, cover for about 3 minutes (checking if you need to make sure it's not burning). Flip each sandwich carefully (this flip can be difficult - just take your time). Cover & cook the other side for another 3 to 5 minutes or until cheese has melted & the bread is a nice crispy golden brown (see picture below).
Slice each sandwich in half, serve & ENJOY!!

Oh my grilled cheese, love it. This looks so good, I have done tomato, and bacon on their own, but never together. I also never thought about adding mayonnaise. So pinning to my everything yummy board.
