Freezing Garden Fresh Peaches for Winter Smoothies
What if you could have Garden Fresh Smoothies in the middle of Winter? - Well, you can!!! I freeze fruit when it is freshest during the summer - not only does it taste better but it is also cheaper.

Wash and drain your peaches. Peel the peaches (click HERE to view an easy way to peel peaches). Slice and place the peaches in a bowl with the juice of 1+ lemons (the amount of lemon juice depends on the amount of peaches - use 1 lemon for every 6 to 8 cups of sliced peaches). Spread your prepared (washed, drained, peeled & sliced) peaches on a cookie sheet (you may line the cookie sheet with wax paper to make it a little easier after they have been frozen). Place them in a freezer for about 2 to 3 hours (or until the peaches feel frozen). Freezing the fruit first will help prevent them from sticking together in the bag.
Now fill your baggies - I put 3 cups of frozen peach slices in 1 bag. I use a
"Vacuum Packer" but using Ziploc baggies is also an option.
Then seal each bag according to the manufacturer's instructions. Label and then they will be ready to use any time of the year.
ENJOY!!
Freeze before vacuum packing! - If you seal before freezing then you will have peach juice all over the counter and inside your vacuum packing machine (and the bag will not seal properly).

I heard someone saying about purchasing peaches when they are in season and freezing them. Never tried it, but sounds like a good idea. :)
