Amazing Asparagus - Recipes & Other Tips

To me asparagus has always meant springtime - green, delicate and fresh.  Did you know that Asparagus is a member of the lily family?  It is a beautiful vegetable.

Not only is asparagus loved for it's delicious taste - it is also very healthy!  Asparagus is a good source of vitamins A, B6 & C, fiber, potassium.  It is high in glutathione which is an amino acid that is a wonderful anti-oxidant.  Asparagus is high in folate which is believed to protect against cancer, reduce inflammation & reduce the risks of heart disease.  Also, asparagus is high in vitamin K which can help prevent osteoarthritis & osteoporosis (again - I'm not a doctor - this information is from my own online research - please see my "disclaimer" at the bottom of this post).

  1. Wow Angie, these recipes look great. I never even thought of asparagus pizza but it sounds great. Here in Germany, asparagus is in season now and people are going crazy for asparagus soup so it's everywhere right now.

    1. I've never had wild asparagus & I have never seen it growing around here - Does it taste any different than regular asparagus? Thanks so much for sharing your interesting asparagus posts!

  3. yes, their taste is more intense then by cultivated ones. They are not so thick, also. They can grow really high, expecially after rain. I can find a lot of them growing wild underneath the olive trees. We eat them almost every day while is its season (it is over by now).

  14. Yummmm....I so adore asparagus. My husband and I have discussed growing it....I think we will probably try to start some next year. I was so sad that I didn't get any this year-- somehow I just missed the season.
