Strawberry Lime Linzer Cookies
I have a bit of a cookie cutter collection and this Easter/Spring Linzer Cutter set is one of my favorites. You can see the cookie set in the picture below on the left - it includes middle cutout shapes of a rabbit, duck, basket, butterfly, egg and a daisy.
I created this recipe with the purpose of using some of my home canned Strawberry Jam. Most of the cookies that I make seem to be very soft - I wanted a crisp cookie for a change and this fits the bill. Also, the flavor combination of strawberry and lime is a burst of spring freshness!

Not a quick cookie to make, I'm sure, but the results are definitely worth it. If I had grandchildren, I would definitely make this for them!
