Kohlrabi Slaw


Kohlrabi tastes a little like cabbage but it is much milder and (when harvested correctly) it is much more tender than cabbage.  For years I grew this vegetable and only ate it cooked.  Then my mom mentioned that as a child in Germany she used to eat Kohlrabi raw - now I prefer eating Kohlrabi raw!

Kohlrabi Slaw

(I cheated and used a bought Cole Slaw dressing packet)

4 medium Kohlrabi (peeled and shredded) (make sure you harvest them before they become tough and woody).
3 meduim carrots (peeled and shredded)
1 medium zucchini (washed and shredded)
1 package Cole Slaw Dressing (I buy the dry packet and then follow the directions on the back - usually you have to add mayonaise, sugar and vinegar)

Prepare the vegetables as described above (I use a food proccessor but you can also shred the vegetables by hand).  Mix all the shredded vegetables in a large bowl.  Mix the Dressing in a small bowl and set aside for about 15 minutes (or according to the directions on the back of the package).  Now pour the dressing onto the shredded vegetables and stir until coated.  Enjoy!!

After having Kohlrabi Slaw I don't ever want to go back to regular Cole Slaw
